“But”… I hear you say….

“I don’t have the time”

“I don’t have the ingredients”

“Healthy stuff is too expensive”

“I’m not really into cooking”

…so you order a take-away!

I know, I was once that person myself.  I often found myself having to choose between cooking a healthy meal or going to the gym then having a ready meal – which was very counter-productive!

… thing is, cooking a meal from scratch can be one of the quickest meals you can have, it will cost far less than a takeaway and it won’t have all the chemical additives a ready meal has.

I have made it a mission to develop recipes that are:

  • Quick to prepare

  • Tasty and filling

  • Nutritious

  • Inexpensive

  • Don’t need fancy kitchen equipment

So give this one a go… lentil chilli… if you have never cooked before, you will need:

  • A couple of pans

  • Some weighing scales or cup measures (1/2 cup and 1/3 cup)

  • A chopping board and a sharp knife

If you are an experienced cook, all this will seem pretty obvious but go ahead and experiment with your own version.

Low cost - the chilli recipe as described comes in at 66p per portion if buying supermarket own-brand ingredients.  Add the rice and a large portion of broccoli and it come to approximately £1.05 per person.  Shop at one of the ‘budget’ supermarkets and the cost is definitely less than £1 per person per meal.

Six of my family and friends have tried and tested this recipe for me so I know it works.  They say it is really tasty and it tastes even better when reheated a couple of days later.  It also freezes really well so is great to get out of the freezer, like a ready meal, when time is really short.
